Happy Monday! A fresh week, a fresh start, and so much to be thankful for. If you've been following my instagram, you know that my sister and I are officially partners, and have purchased a food truck! We're on our way, but still have a loooooot to go. A perfect vegan queso has been on my mind a ton lately. When Sydney and I went to Fancy Food Show in June, we tried the Sieta Cashew queso and it was miiiind blowing. I was hooked! BUT, I had to wait a good month until it was released in stores. And even worse, when it hit finally hit Whole Foods, the ones near me didn't have it out on the shelves yet. I kid you not when I say I checked every.single.time I went there. So finally, I was like "ya know what- I'm just going to make my own!". Went to Whole Foods yesterday with a list of ingredients, and surely enough.. there it was. In the fridge section for the first time.. it's big debut. THEE Sieta queso. UGH
But since I've already pumped myself up on my own version, I figured I'd give it a shot before caving and buying the perfect one right in front of me at arms reach. Determined was an understatement. And you know what? I'm glad I did because this came out SO AMAZING. There aren't many times I get so excited over a recipe, but this certainly is one of them. I tested out batch, after batch, after batch, and by the end of the night I felt sick on cashews. Woke up this morning for one last attempt to tweak it ever so slightly, and here you have it! You won't believe it's vegan, and that it's actually healthy for you. NO preservatives or funky ingredients.
I can't speak for everyone when I say this, but the news circulating with these weed killer, cancer causing ingredients in literally everything has been freaking me out. So I've decided I'm not going to eat anything that contains ingredients I'm not familiar with, and stay as preservative-less as possible. Like tortilla chips and salsa with 15+ ingredients (whaaaaat?!) aint gonna cut it this time, and I'm reading every single label before buying anything. Can you say paranoid?! Luckily, this sauce is as puuuure as can be. And healthy!

I N G R E D I E N T S:
1/2 cup of raw cashews, soaked in boiling water for 20 minutes
4 pickled jalapenos slices (the spicy jarred ones!)
1/2 cup of water
1 Tbs of white vinegar
1 Tbs of nutritional yeast flakes
1/2 tsp of sea salt
1/4 tsp of each garlic powder + onion powder
1/8 tsp of turmeric
1/2 cup of mild/medium Salsa- adjust to heat preference!
2 Tbs canned diced mild green chiles (optional)
Batch of my favorite Spicy Taco "Meat"
Diced tomatoes + red onion
Black beans, or beans of preference!
Fresh lime to top
PREP: Begin by soaking your cashews. While that's happening, prep the toppings of choice. That Taco meatless meat is a muuuuust! Also, I popped my tortilla chips in the oven at 375 degrees fahrenheit for 5-10 minutes to warm and brown a bit.
QUESO!: Toss your soaked + rinsed cashews in the blender with all ingredients except for the salsa and chiles. In a high speed blender, blend until suuuuper smooth and no chunks remain. Pour into a bowl and stir in the salsa and chiles! It may seem a little watery but when you heat it, it's going to thicken a bit. In a small pot over medium/low heat, heat the queso while whisking pretty frequently until heated through. It you feel it's getting to thick, add a little water. (If you're not planning on eating/serving right after you make it, it going to thickens slightly in the fridge- so you'll probably need to thin out when heating later on!)
ASSEMBLE: Top your nachos with all the best topping above, and your freshly made Cashew Queso! I doubt there will be left overs ;)
*Notes: You can adjust the heat by stirring in a hotter salsa! I prefer mild, but all to preference. Also, since I made sooooo many batches, this was originally a half batch. However, I found it made the perfect amount for a large nacho platter, and I didn't want to be left with leftovers with dayssss. Double if preferred!
